Ingredients
- Chicken fillet (200 grams)
- Carrots (200 grams)
- Red peppers (120 grams)
- Red Onion (100 grams)
- Courgettes (151 grams)
- Mushrooms (127 grams)
- Water (200 ml)
- 2 x Chicken Stock Cubes
Other Things You Will Need
- Food Processor using the thin slicing blade
- Microwave
- Knife
- Chopping Board
- Frying Pan
- Wooden Spoon
- Jug or Large Cup
- Food Scales
Before You Start Cooking
- Defrost Chicken for 12 hours in the fridge until thawed or use a microwave on defrost setting for 5 minutes
- Wash hands for 20 seconds using soap and water
- Place all ingredients and other things you will need on the kitchen worktop
- Weigh or measure ingredients as required
- Boil a Kettle of water
Method
- Wash all the vegetables
- Cut the ends of the courgette and carrot and peel the onion.
- Use a spiraliser to convert the carrots and courgettes into strips
- Slice the onion, mushroom, and pepper using a food processor with the thin slicing blade
- Put the chicken stock cubes in a cup or jug and add 200 ml of hot water from the kettle and stir allowing the cubes to dissolve
- Dice the chicken
- Place a frying pan on the hob and set to a medium heat
- Put the onions in the pan and gently fry for around 2 minutes, stirring occasionally using a wooden spoon
- Add the chicken to the pan and continue to fry for a further 5 minutes until the chicken begins to brown
- Add the strips of courgette and carrot to the pan, stir using the wooden spoon and leave for a further 5 minutes
- Add mushrooms and peppers to the pan, give another stir and leave for a further 5 minutes
- All the vegetables and chicken are now fully cooked, increase the heat to full and add the dissolved chicken cubes, use a little extra water if any of the dissolved cubes are stuck to the bottom of the cup or jug
- Give a good stir and leave for 2 – 3 minutes or until the sauce separates in the bottom of the pan using a wooden spoon
- Serve
Notes
- If you find the vegetables are too soft for your taste then simply cook for 3 minutes rather than 5 minutes as shown in the video
- The video states, in error, to add 300 ml of water to a cup when this should be around 200 ml of water
