You can make the bread with plain flour but you will need to use an extra 30 grams of baking powder per 450 grams of plain flour and follow the rest of the recipe as written.
Once cooked you will find the loaf of bread will rise to around 3/4 the size of a loaf made with strong bread flour.
You can make the bread with water rather than milk when you follow the bread recipe. Once cooked you will find the loaf of bread will fully rise to the same level as if it was made using milk.
I find using water creates a better-flavoured bread, so you could find it sweeter or saltier than you expect, so adjust the ingredients accordingly to your preferred taste.
If you like to add flavouring to your bread then it can be off the chart, for example adding a capful of garlic granules will create a great tasting garlic bread.
