Ingredients
- Whole Chicken (1,450 grams)
- 2 x Carrots (120 grams)
- 2 x Celery sticks (100 grams)
- Brown Onion (100 grams)
- Paprika (10 grams)
Other Things You Will Need
- Cutting board
- Knife
- Large Baking Tray
- Kitchen Foil
- Tablespoon
- Food Scales
Before You Start Cooking
- Defrost Chicken for 12 hours in the fridge until thawed or place in a microwave overnight
- Wash hands for 20 seconds using soap and water
- Place all ingredients and other things you will need on the kitchen worktop
- Weigh or measure ingredients as required
- Preheat the oven using Gas Mark 6 / 200 degrees C / 400 degrees F
Method
- Wash the carrots and celery and cut the ends off with a knife
- Peel the onion
- Rough cut or dice the carrots, celery and the onion
- Put the carrots, celery and the onion at the bottom of a baking tray
- Place the chicken on top of the vegetables
- Sprinkle the paprika on the chicken and rub into the skin using your fingers
- Cover the baking tray containing the chicken and vegetables with kitchen foil, crunch the edge of the tray to seal
- Put in the oven
- Every 30 minutes remove from the oven, lift the foil and baste the chicken with the juice from the bottom of the tray using a tablespoon. Recover the baking tray with foil and put back in the oven for a further 30 minutes
- After 90 minutes (60 minutes per kilo of chicken) or when golden brown remove from the oven
- Place on a cutting board and rest for 5 minutes
- Discard the vegetables and excess fat in the baking tray
- Serve
Notes
- This recipe if great for weight loss especially if you remove the chicken skin before eating
- Use the leftover vegetables and excess fat as a chicken gravy, as shown in the video, to encourage weight gain
