Ingredients
- 2 x Chicken Fillet (200 grams)
- Vegetable Casserole Mix (600 grams)
- 4 x Chicken Stock Cubes
- 1 Calorie Spray Oil (5 sprays)
- Boiling Water (Approx. 2 Pints)
- Salt and Pepper to Taste
Other Things You Will Need
- Frying Pan
- Slow Cooker
- Jug
- Kitchen Tongs or Fork
- Turner or Large Spoon
- Kettle
- Food Scales
- Kitchen Ladle to Serve
Before You Start Cooking
- Defrost the chicken for 12 hours in the fridge until thawed or use a microwave on defrost setting for 5 minutes
- Wash hands for 20 seconds using soap and water
- Place all ingredients and other things you will need on the kitchen worktop
- Weigh or measure ingredients as required
- Turn on the slow cooker and set to low heat
- Boil a Kettle of water
Method
- Place a frying pan on the hob and set to medium heat
- Add 5 sprays of the 1 calorie oil
- Add the chicken fillets and fry for 5 minutes or until golden brown, move them around occasionally
- Turn chicken fillets over using kitchen tongs or fork and fry for a further 5 minutes or until golden brown
- Once both sides are golden brown turn the hob off
- Remove the vegetables from the shop wrapping, wash and place in a large bowl
- Sprinkle the stock cubes on top of the vegetables
- Put the vegetables with the stock cubes in the slow cooker
- Fill the slow cooker with hot water using the kettle until the water is level with the vegetables
- Stir the contents of the slow cooker using a turner or large spoon
- Place the chicken fillets on top of the vegetables using kitchen tongs or a fork
- Leave for 6 hours or overnight to cook
- Lower the heat to warm and give the chicken casserole a good stir in the slow cooker (this will break up the chicken)
- Serve
Notes
- When frying the chicken fillets press them down to the bottom of the pan so extra flavour is retained
