Homemade Canned Tomatoes - Preserve the Taste of Summer in Every Jar!

Ingredients


 

  • Fresh Tomatoes (2,178 grams or 18 tomatoes)
  • Hot Water (Used to blanch the tomatoes in pan)
  • Pinch of Salt to Tenderise

 

Other Things You Will Need


 

  • Large pan
  • Storage Jars
  • Sharp Knife
  • Kitchen Ladle or Slotted Turner
  • Kettle

 

Before You Start Cooking


 

  • Wash hands for 20 seconds using soap and water
  • Place all ingredients and other things you will need on the kitchen worktop
  • Weigh or measure ingredients as required
  • 3 x sterilised sealable storage jars
  • Boil a kettle of water

 

Method


 

  • Wash the tomatoes
  • Core the tomatoes using a knife
  • Place tomatoes in a pan and add boiling water from the kettle
  • Boil the tomatoes for 10 minutes or until skins are soft
  • While boiling add a pinch of salt in each of the storage jars
  • Remove tomatoes individually from boiling water using a kitchen ladle or slotted turner and allow to cool
  • Carefully remove the skin from each tomato and place in the storage jars (cut the tomato if required)
  • Allow the juice to flow from the tomatoes in the storage jar, no additional water is required
  • Close the lid and seal
  • Place the jars in the refrigerator and store for up to 2 weeks

 

Notes


 

  • Fantastic to make curries or pasta sauce, also can be reduced to make tomato purée!
  • The tomatoes in the jars will not be as red as the canned version purchased from the supermarket

The video was made during the Covid-19 pandemic in April 2020 where canned tomatoes were in short supply.  It is better to purchase canned tomatoes rather than making your own.  However, it was an interesting experience at the time
